The winery is located in a 16th century residence in Soave, a beautiful facility with a nice tasting room, where you can taste and also purchase Coffele’s wines. The family vineyards in Soave are located in Castelcerino, in the hills north of Soave in the traditional Classico region. Today, in this 25 hectare vineyard, they cultivated Garganega and Trebbiano di Soave, as well as Chardonnay, Sauvignon, Merlot and Cabernet Sauvignon. The house here in Castelcerino has been restored, and a large grape-drying room added, used for their award winning Recioto di Soave. Most recently, Coffele has expanded into the Valpolicella DOC with the purchase of a small estate in Campiano, and are now producing a Valpolicella and an Amarone.

Tasting note: Full of fruit: sour black cherries, blackberries, and ripe red cherries, with hints of balsam and spice and the slightest suggestion of herbaceousness. The aroma is rich and intense, but with great finesse.

It is highly structured, harmonious, and delicate, with a long finish. The refreshing acidity balances out the wine’s alcohol, and the tannins are dense yet fine.

Soil Composition: calcareous clay

Production: The grape harvest, exclusively by hand, starts in October and all the grapes are collected in crates of no more than 20 kg. After crushing, fermentation takes place at temperatures between 25°C and 28°C for 10-12 days, with pumping over the cap three times a day for 15-20 minutes. Storage and ageing of the wine takes place in steel barrels for about four months.
